Christmas Spritz Cookies

If you are not a person who enjoys the toil of rolling out cookie dough and dealing with cookies that stick to the board, then cookies made with a cookie press are for you.  These Christmas Sprinkle Spritz Cookies are light, delicious, butter cookies that melt in your mouth!  Small and delicate, but delightful for your taste buds.

 

Cookie presses are TERRIFIC!  No rolling out dough or cutting out shapes with cookie cutters.  No worries that after all of that work, that the cookie shape will get ruined because the dough has stuck to the board that you thought was floured enough.  With these cookies, you just press them right onto the cookie sheet and you move on to the next step.

This recipe is for an unglazed version of Christmas Spritz Cookies. A time saver and cuts down on sugar.

So, instead of icing the cookies after they are baked with a sugary glaze and letting the cookies dry on a rack before storing—which can take a whole lot of time and patience—simply brush egg whites on each cookie and sprinkle with colored sugar.   These sweet little cookies will still be a hit, especially with the kids!

Ingredients
For the cookies:
  • 1 cup sugar
  • 2 1/2 sticks (1 cup + 4 tablespoons) unsalted butter at room temperature
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 tablespoons milk
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
For decorating the cookies:
  • Eggwhite from 1 large egg, lightly beaten (for egg wash)
  • colored sugar crystals

  • 1 cup sugar

Instructions
  1. Preheat oven to 375⁰F. Fit dough press with a Christmas-themed cookie disc.
  2. Using an electric mixer, beat butter and sugar until light and fluffy.
  3. Beat in egg, vanilla, almond extract, and milk.
  4. In a separate bowl, mix together flour and baking powder.
  5. Gradually mix flour mixture into butter mixture. Mix just enough until dough appears smooth. Shape dough into logs that fit into the dough press.
  6. Using a cookie press, press cookies onto ungreased cookie sheets, leaving about 2 inches in between each cookie. Change discs to increase the variety of your cookies. [Follow manufacturer’s instructions.]
  7. If you don’t have a cookie press, simply form little balls of dough with your hands, place dough balls on the cookie sheet and lightly flatten with the bottom of a glass or with your hand. They should be no thinner than ¼ inch thick. If you like, with the tines of a fork, make ridges across each cookie.
  8. After forming one batch of cookies on the cookie sheets, brush lightly beaten egg white onto each cookie. Sprinkle with colored sugar as desired.
  9. Bake 6 to 10 minutes, depending on thickness, or until lightly browned around the edges. Remove cookies from cookie sheets and let cool completely on a rack.
